Asian style baked rice noodles with chicken



One more recipe for busy people: Asian style rice noodles with chicken made in the oven. Ready in less than an hour. Basic ingredients. Minimum efforts. Delicious!


Ingredients:

Skinless boneless chicken thighs – 4 pcs (1 pound), more if you’d like

Rice vermicelli – 150 g or more

Chopped cilantro, spring onion, chili pepper for serving

For marinade:

Soy sauce – 5-7 tbsp. (75-100 ml)

Vegetable oil – 1-2 tbsp. (you can use any oil of your choice)

Garlic – 5-6 cloves, crushed

Ginger (finely grated) – 1 tsp,

Brown sugar – 1-2 tbsp.

Chili flakes – 1 tsp.


Preheat the oven to 350ºF (180ºC)


Step 1

In a bowl, mix sugar and soy sauce until sugar is dissolved, add oil, garlic, ginger and chili flakes.

Marinate chicken for 30 minutes or overnight. If you don’t have time, you can start baking them right away.

Using a baking dish, arrange chicken thighs in a single layer and pour over the marinade. Bake for 20 minutes.




Step 2

Take the chicken thighs out of the baking dish and set aside. Add rice vermicelli to the marinade, add boiling water to the marinade if needed, so that the rice vermicelli are covered with liquid. Put the chicken back to the baking dish on top of rice vermicelli. Bake for another 10 minutes.



Step 3

Remove from the oven, and serve.


Note: When you add boiling water to the marinade, taste the marinade. Add soy sauce or sugar if needed to adjust the flavor – it should be salty-sweet.
