Ve-e-ery easy to make and very tasty cookies with very rich chocolate flavor!

Ingredients
All-purpose flour - 1 cup (120 g)
Unsweetened cocoa - 1/2 cup (50 g)
Baking powder - 1/4 tsp.
Kosher salt – 1 pinch
Unsalted butter, at room temperature - 1/2 cup (115 g)
Sugar – 1/2 cup (100 g)
Pure vanilla extract – 2 tsp.
Large egg - 1
Shelled unsalted pistachios, chopped - 1/2 cup (60 g)
Cooking Instructions
Step 1
In a medium bowl whisk together flour, cocoa, baking soda and salt
Step 2
Using an electric mixer, beat the softened butter and sugar on medium speed until light and fluffy, about 2-3 minutes. Add vanilla extract and egg. Continue whisking at low speed to mix well.
Step 3
Combine dry and wet ingredients and mix well. You should have a plastic dough that does not stick to your hands.
Step 4
Divide the dough into 2 parts and roll into 2 logs about 1.5 inch in diameter. Roll in pistachios to evenly coat, then wrap in plastic wrap. Refrigerate until firm, at least 1 hour.
Step 5
Preheat oven to 350 ° F (180 ° C). Line a baking sheet with parchment paper. Take the dough out of the fridge, slice the dough into 1⁄4-inch- thick (0.6 cm) rounds. Bake for 10 to 13 minutes, until the surface of the cookies is sandy to the touch.
