Crepe cake



Cake made of crepes? Yeaaah! This crepe cake is beautiful, elegant and delicious. It is made with two different creams that are balancing the final taste of the cake. I hope this recipe will inspire you to make it. You will enjoy the process and the result! That's for sure!


To make this cake you’ll need:

15 crepes (the crepes batter recipe and the technique of making Russian crepes (blini) you can find on my page), Pastry cream and Blueberry cream.


For the easiest pastry cream ever:

Sugar – ½ cup

Cornstarch – ¼ cup

Salt – 1 pinch

Milk – 2 cups

Egg yolks – 4

Butter (unsalted) – 2 tbsp.

Vanilla extract - 1/2 tsp.

Lemon zest – 1 tbsp.

In a medium-size saucepan whisk together milk and egg yolks. Add sugar, cornstarch, and salt and whisk again. Add butter and bring the mixture to a boil over medium heat. Let it boil for 1 minute, continue gently whisking. Remove from heat, stir in vanilla extract.

Strain pastry cream into a bowl, add lemon zest then cover with plastic wrap (you should press it directly onto cream surface). Refrigerate at least 2 hours or overnight. Whisk until smooth before using.


For the blueberry cream which comes together in just a few minutes:

Blueberries (fresh or frozen) - 2 cups

Water - 1/2 cup

Sugar - 1/2 cup

Lemon juice (freshly squished) 2 tbsp.

Cornstarch - 1 tbsp.

In a medium-size saucepan combine water, sugar and lemon juice. Bring it to a boil then add blueberries and reduce heat.

In a small bowl whisk the cornstarch with 2 tablespoons of cold water (the mixture should be liquid, if not, then add a little more water). Slowly stir the cornstarch mixture into the blueberries. Simmer stirring frequently until the blueberry sauce is thick enough (1-2 minutes). Remove from heat and let it cool.


Assembly:

Lay 1 crepe on a cake plate and cover it with a thin layer of pastry cream. Cover with a crepe and repeat with 3 more crepes. Each 4th crepe cover with a blueberry cream. Make sure you have enough blueberry cream to cover the top of the cake. Continue assembling the cake with the rest of your crepes. Cover the top of your cake by the pastry cream, let it chill for at least 2 hours, then add some blueberry cream on top of it. Chill for at least 2 hours.




I didn't even expect that this cake will be so delicious!
