It has been proven that bright, colorful dishes might improve not only appetite, but also mood. Try to make these stuffed tomatoes: besides being colorful, they are very flavorful and delicious.
Ingredients:
Medium size tomatoes - 8 pcs.
Ground meat – 0.5 lb. (250 gr.)
Green onions - 1 bunch
Olive oil - 2-3 tablespoons
Salt, pepper, thyme, oregano, coriander - 1 tsp. each
Breadcrumbs - 2-3 tablespoons
Green bell pepper - 3-4 pcs.
For bell pepper sauce: cut the peppers lengthwise in half. Scrape away and discard the stems, veins and seeds. Chop the peppers coarsely and transfer it to a blender. Add olive oil, a few basil leaves, couple of garlic cloves, salt, pepper and whizz until smooth. Adjust the seasoning to taste, add some oregano and thyme, then transfer the mixture to a Dutch oven.
Cut a thin slice off the top of each tomato. Scoop out pulp, leaving a 1/2-in. shell.
Meanwhile, in a medium bowl, mix together ground meat (I used ground beef and ground pork), salt, pepper, coriander, chopped spring onion and breadcrumbs. Stuff tomatoes with the filling then transfer them to a Dutch oven on top of the bell pepper mixture.
Cook with a close lid on medium heat for 20 minutes or until the stuffing is cooked through. Then open the lid, cover each tomatoes with a previously sliced top, transfer the Dutch oven to the preheated oven and broil the tomatoes for 5 minutes.
